Secret ingredient is Miracle Whip
2 – 6 lrg idaho russet potatoes
1/2 onion finely chopped
1 large carrot grated
5 hard boiled eggs
1 – 1.5 cups of Miracle Whip
enough milk to thin out the MW to the consistency you want…not too thick and not too thin.
Boil potatoes in their jackets till tender, cool and then peel. Cut the potato in half lengthwise, then in half again Slice about 1/4 inch slices out of each quarter of the potato. Put into a bowl. Add the chopped onion, grated carrott, 3 finely chopped eggs, salt and pepper to taste. Mix together gently.
Mix the MW and milk to desired thickness, then pour over potato mixture and gently mix it into the salad. You don’t want dry salad, nor really wet…but just right.
Slice the remaining 2 eggs to decorate the top of the soothed top of the salad. Refrigerate to meld the flavors…then enjoy!
