Naida’s Frozen Lemon Crunch

So refreshing during the summer months. We all loved it when mom began to make it and begged her to at least double the batch.

Crust:

2 C crushed graham crackers

1/4 C melted butter

2 Tbl sugar

Filling:

1 C canned milk (carnation)

1/3 C lemon juice

2 eggs

1/2 C sugar

1/2 tsp salt

1 Tbl grated lemon rind

Mix Crust ingredients together and place half in a ice-cube tray patting in smooth and us the sides

Chill milk in freezer tray until soft ice crystals form (15 -20 Min) Whip until stiff. Add lemon juice and continue to whip till thick and creamy. Fold in whipped mix and grated lemon rind. Spoon lemon mixture over crust. Sprinkle with left for crust and freeze till solid and ready to cut into slices and enjoy.
