2.5 TBL butter
1 TBL Olive Oil
1 pound red onions thinly sliced
2 tsp sugar
5 C boiling beef stock
salt and pepper to taste
2 Tbl sherry optional
Bread toasted 2 slice French bread cut into triangle pieces from each slice
Parmesan cheese
Grated Swiss cheese
Heat butter oil and add onions , stir till clear over med heat. Soft in 15-20 min. Sprinkle with sugar, stir over moderate heat about 5 min. Add stock, Season to taste. Cover and simmer gently 30 min. Place bread croutons into individual flame proof bowls., sprinkle with olive oil, parmesan cheese. Pour boiling soup over crotons, spindle liberally with swiss cheese and slip under broiler till cheese bubbles
