Chocolate Mousse

6-8 people

8 oz sweet or semi sweet chocolate

1/4 C strong coffee. Coverpan (double broiler) and simmer about 5 min. Stir till smooth. Beat in 3/4 stick unsalted butter. add 3 egg yolks.

Beat 3 egg whites till foamy, beat in 1/4 tsp salt and 1/4 C sugar still shinny peaks. Fold into Chocolate mixture (do not overbeat)

Pour into serving bowls, and place in fridge for a few hours.

Serve with whipped cream
