1/2 C sugar
1/2 C firmly packed brown sugar
1/2 C butter
1 large egg
1 tsp vanilla extract
1 1/4 C flour
1 C uncooked cooking oats
1/2 C flaked coconut
1/2 tsp baking powder
1 C coarsely chopped macadamia nuts
(these have become my goto chocolate chip cookie recipe. I add Guittard Chocolate chips and pecans rather than the macadamia nut. I love them both ways)
Beat 1st 5 ingrediants at medium speed with an electric mixer until fluffy. Bombine flour and next 5 ingredieants. Add half of the mixture at a time to surgar mixture, beating at low speed until blended
Make 2-3 inch balls lightly packed and place on the baking sheet. Cook at 350 degrees till lightly browned, 10 -15 min. cook on baking sheets 1 min and remove to racks. I usually double the recipe and freeze all but one dozen of the balls for a later time. When cooking frozen cookies it will take about 1-2 min longer to brown. dont overcook.
