Cranberry Apple Sweet Potato

Use 1 sheet 18 x 24” heavy duty aluminum foil.

4 medium sweet potatoes (1 1/2 lbs) peeled and cut into 1/4” slices

2 apples, cored, thinly sliced into rings

1/2 cup dried cranberries or raisins

1/2 cup packed brown sugar

3 tbsp margarine, melted

1/2 tsp ground cinnamon

Center sweet potatoes, apples and cranberries on sheet of foil.  Sprinkle with brown sugar.  Combine margarine with cinnamon, drizzle over top.

Bring up foil sides.  Double fold top and ends to seal, making one large foil packet, leaving room for heat circulation inside.

Bake 450* 25-30 minutes, or grill 20-25 minutes in covered grill on medium high.
